The correct grind size depends on the brewing method you use. For example, a fine grind is ideal for an espresso, while a coarse grind is better suited for a French press. Light, medium and dark roasting mainly differ in the duration and intensity of the roasting process, which affects the taste and aroma. With a light roast, the beans retain much of their original flavours and have a light acidity. Medium roast provides a balanced profile with more body and milder acidity, while dark roast delivers a more intense flavour and a fuller mouthfeel, often with notes of chocolate and nuts. Coffee is best consumed within 2 to 3 months after roasting for an optimal flavour experience. We recommend allowing the beans to rest for at least a week, as the flavour is not yet optimal in the first week after roasting. So if you receive a bag with a recent roast date, wait a little longer for the best result.

You should store fresh coffee well away from moisture, heat and odours, in an airtight container at room temperature. If you wish to keep the beans for longer than a few weeks to months, freezing is also possible, provided the packaging is completely airtight to prevent moisture from getting in. We advise against using the fridge, as coffee absorbs odours, which can negatively affect the flavour. For ground coffee, it is more difficult to keep it fresh; we advise not to store ground coffee for more than 14 days after receipt, in an airtight container at room temperature. Although coffee beans are technically longer lasting (1 to 2 years), we recommend consuming fresh coffee within 2 to 3 months for the best flavour experience.

Do I really really really need your freshly roasted coffee? Yes! You enjoy fresh bread, you love fresh juices, and you eat your vegetables fresh as well. Everything tastes better fresh, so why would you drink coffee that has been sitting on the shelf for ages? Our coffee is freshly roasted just before it is dispatched. Every day we roast small batches so we can always guarantee that the coffee beans we send are fresh. On top of that, we simply make really good coffee. We taste every batch we produce (yes, we do get little sleep with all that caffeine) and if we’re not satisfied with it, the batch is rejected. Every bag of coffee we send has the roast date printed on the packaging so you can always see exactly how fresh your bag of coffee is. And equally important: we’re very competitively priced! We guarantee that our freshly roasted coffee is never older than four weeks upon delivery. In practice, it is often fresher, as we try never to roast more than needed for the coming week. Each package clearly displays the roasting date.

The flavour of freshly roasted coffee beans is optimal after about a week of resting. If you receive beans that have been roasted recently, it may be worthwhile to let them rest for a few more days for the best taste experience.

It is completely normal for our bags of coffee beans to appear inflated. This is not a sign of a problem or spoilage, but a natural process that takes place after the coffee beans have been roasted. Below, we explain why this happens and why it is actually good for the freshness of your coffee. Coffee beans release CO₂ after roasting After roasting, coffee beans release a small amount of carbon dioxide (CO₂). This process, known as 'degassing', is a natural by-product of roasting. The released CO₂ can cause the bag to become inflated at times. One-way valve preserves freshness Our coffee bags are fitted with a one-way valve on the front. This valve allows CO₂ to escape from the bag but prevents oxygen and other air from entering. Oxygen is the biggest enemy of fresh coffee; it accelerates the oxidation process and diminishes the flavour. The valve helps the coffee stay fresh for longer. Why does the bag sometimes remain inflated? On some bags, the valve is slightly tighter, which means the CO₂ is released more slowly. This can cause the bag to stay inflated. This does not affect the quality or freshness of the coffee. In fact, the remaining CO₂ in the bag helps to protect the beans from oxygen and keeps them fresher for longer. Conclusion: no reason for concern! An inflated bag of coffee beans simply means the coffee is fresh and still releasing CO₂. This process is completely natural and a sign of quality. 1. Are coffee beans vacuum packed? No, coffee beans are not vacuum packed. Instead, bags with a one-way valve are used. This valve allows gas (mainly CO₂) to escape, but prevents oxygen and moisture from entering. 2. Why can coffee beans not be vacuum packed? After roasting, coffee beans continue to release carbon dioxide. If they were in vacuum packaging, that gas would have nowhere to go. The pressure in the bag would therefore increase, causing the packaging to swell or even burst open. That is why coffee beans are packed in valve bags that allow the gas to escape without letting air in. 3. Why do some coffee bags look vacuum packed? Some bags, especially those at the bottom of a pallet, appear tight or vacuum-sealed. This is due to: Cooling: when the temperature drops, the air in the bag contracts, making the packaging appear tight. Pressure differences: the valve allows gas to escape, resulting in slightly less pressure inside the bag than outside. Weight: the bags at the bottom are compressed by the layers above. It may look vacuum packed, but it is not. 4. Is ground coffee vacuum packed? Yes, sometimes it is. Ground coffee has already released most of its gas, so no pressure builds up in the packaging. This means it can be safely vacuum packed without the bag swelling.

Coffee can vary slightly in flavour per harvest, season and batch. This is normal and part of the charm of our fresh coffee. Our blends (such as the Madrugador) have a fixed roast profile and are therefore consistent in flavour. Have you noticed a clear difference in flavour? Get in contact with us.

If you have ordered our fresh coffee, you can assume that this coffee has been roasted within the past 4 weeks. The exact roast date is stated on the packaging. Our fresh coffee has a shelf life of one year after the roast date, but it tastes best in the first 3 months. For other coffee brands (such as Lavazza, Segafredo, Kimbo), this coffee is packaged by the manufacturer. The shelf life of these is generally 12–24 months after the roast date.

Yes! Our own Café du Jour coffee beans are freshly roasted in our roastery in Honselersdijk. We roast coffee beans daily in small batches, so the quality of our coffee remains high. We aim to have the roasted coffee beans delivered to your doorstep within 4 weeks, so you always have fresh coffee. Watch here how our coffee is roasted. Good of you to keep an eye on the roast date. It's worth knowing exactly what the four-week promise covers:

• For coffee from our own roastery we aim to have the coffee on your doormat within four weeks of the roast date. We roast in small batches and work on a FIFO basis, so the oldest stock goes out first. That keeps roast dates as recent as possible.
• For the other brands we sell those four weeks don't apply. Brands such as Segafredo, Lavazza, illy and Kimbo roast their own coffee and work with a best-before date rather than a fresh roast date. That coffee is made with exactly that in mind.

One more thing about shelf life: our fresh coffee keeps for a year after the roast date. The four weeks are about peak flavour, not about the coffee going off.
