Heat up some red wine (but don’t let it boil) and add about 2 tablespoons of the spice mix (you can use a tea filter if you like) per 0.75 to 1 litre of wine. Let it steep to your preferred taste. This blend of mulled wine spices includes star anise, cloves, two kinds of orange peel, chunks of authentic Ceylon cinnamon, and aniseed. Add sugar (preferably cane sugar) and fresh lemon or orange to suit your taste.

This spice mix for mulled wine includes cloves, star anise, cinnamon, sweet and bitter orange peel, and aniseed, based on an authentic German recipe. To prepare, just heat some red wine and add 2 tablespoons of the mix. Let it steep to enhance the flavor.
Glühwein is particularly popular in Central Europe, but it's quickly becoming a favourite throughout the rest of Europe, especially during the winter months and around Christmas time.
- Use a bottle (approximately 75 cl) of red wine (any brand will do) and heat gently in a pan (avoid boiling!)
- Add 2 tablespoons of mulled wine spices. If you prefer not to have loose herbs, use a spice or tea infuser.
- Let it soak for at least 5 minutes in the hot, non-boiling red wine
- If desired, add sugar to taste
