Auro - Saloy - 100% cocoa chocolate

This bar consists entirely of cacao, with no added sugar. That makes it taste firmly bitter and intense, clearly different from a dark bar of 70 or 85 percent.

Underneath that bitterness sits the flavour profile of Saloy: spicy, with notes of bergamot and cherry. Take small pieces and let them melt slowly, that is when those notes come through best.

The ingredient list has one ingredient: 100% cacao. So no sugar, milk or soy has been added and the bar contains no animal ingredients.

Per 100 grams this chocolate contains 600 kcal (2510 kJ), 51 grams of fat of which 31 grams saturated, 24 grams of carbohydrates of which 1 gram sugars, 12 grams of protein and 0.003 grams of salt.

The bar itself weighs 60 grams. No sugar has been added, that one gram of sugars per 100 grams comes naturally from the cacao bean.

Auro makes this chocolate in the Philippines. Saloy is part of Auro's Reserve Collection, for which beans from one single harvest are used.

The plantations lie among tropical mountain forests and are fed by fresh spring water. You taste that character again in the spicy, slightly fruity profile of this bar.

Store this bar cool and dry, preferably around 15 to 18 degrees and out of direct sunlight.

Do not put dark chocolate in the fridge. The cold and the moisture make the chocolate bloom and you get a greyish white haze on the bar. The flavour does stay good, but the texture becomes grainier.
