Coenraad van Houten was a pioneer in cocoa pressing, and his son later developed the "dutching" process. Van Houten's story began in 1815 when Casparus Van Houten set up a chocolate factory in Amsterdam. Cocoa beans were ground into a fine powder, which was then mixed with milk to create a chocolate drink, or with sugar, cinnamon, and vanilla to make biscuits.
In 1828, Casparus invented the hydraulic cocoa press, which separated the cocoa butter from the drink, resulting in a lighter and more nutritious cocoa powder. His son Coenraad inherited his father's passion for cocoa and went on to invent the renowned Dutching process, which alkalises cocoa to enhance its flavour and solubility.
