Krak Chocolate - Juniper Berry - Milk Chocolate


North of Venezuela, nestled between the Caribbean islands of Grenada and Barbados, lies the small island of St Vincent and the Grenadines, home to the cocoa used in this chocolate. The cocoa is scattered across the island and is managed by the St Vincent Cocoa Company. They oversee 250 hectares of land and purchase cocoa from around 100 local farmers. The cocoa plants thrive alongside maize, banana, and ginger plants, sheltered by the shade of coconut and mahogany trees.
Krak Chocolate is the creation of bean-to-bar chocolate maker Mark Schimmel. While most chocolatiers and confectioners rely on melted factory chocolate, Mark is a master of the entire chocolate-making process.
From selecting cocoa beans by vintage and origin to roasting and rolling, he crafts unique flavours you won't find in supermarket chocolate bars.
Chocolate with Juniper
The berry-like cones of the juniper plant are used to flavour gin, aquavit, and Bénédictine. The word "gin" actually comes from the juniper plant. The term "genever" also originates from the juniper berry. These dried cones are perfect for seasoning game marinades and are even traditionally used in sauerkraut. You can often find dried berries in supermarkets. Besides the berries, the leaves are also used, for instance, when grilling fish.
